Crispy Cottage Cheese Chips (Printable Version)

Golden crispy chips made from seasoned cottage cheese, baked until perfectly crunchy for protein-rich snacking.

# What You'll Need:

→ Dairy

01 - 14 oz cottage cheese, low-fat or regular

→ Seasonings

02 - 1/2 tsp garlic powder
03 - 1/2 tsp smoked paprika
04 - 1/4 tsp ground black pepper
05 - 1/2 tsp sea salt

→ Optional Toppings

06 - 1 tbsp finely chopped fresh chives
07 - 2 tbsp grated Parmesan cheese

# How to Make It:

01 - Preheat oven to 356°F and line two baking sheets with parchment paper.
02 - Place cottage cheese in a fine-mesh strainer and press gently to remove excess liquid.
03 - Transfer drained cottage cheese to a mixing bowl. Stir in garlic powder, smoked paprika, black pepper, and salt until thoroughly combined.
04 - Drop heaping teaspoons of mixture onto prepared baking sheets, spacing about 1 inch apart. Flatten each mound lightly with the back of a spoon to form thin rounds.
05 - Sprinkle with chopped chives and/or Parmesan cheese if using.
06 - Bake for 20-25 minutes until chips are golden and crisp at edges. Rotate trays halfway through cooking for even browning.
07 - Let chips cool on baking sheet for 5 minutes, then carefully transfer to wire rack to cool completely before serving.

# Expert Tips:

01 -
  • Fourteen grams of protein per serving means you're actually satisfied after snacking, not hunting for something else ten minutes later
  • They get shatteringly crisp while staying completely gluten-free, which feels like kitchen magic
02 -
  • The first time I made these, I didn't drain the cottage cheese and ended up with soft, gummy disks that never crisped up no matter how long I baked them
  • They might feel slightly soft when you first take them out, but they transform into perfect chips as they cool, so don't keep baking thinking they're not done
03 -
  • If you're doubling the recipe, use two baking sheets instead of crowding one, or the steam from all that cheese will prevent proper crisping
  • Store them with a silica gel packet if you live somewhere humid, otherwise they'll soften overnight despite your best efforts
