04 - 1/4 tsp black pepper

→ Vegetables

05 - 1 red bell pepper, thinly sliced
06 - 1 yellow bell pepper, thinly sliced
07 - 1 green bell pepper, thinly sliced
08 - 1 large yellow onion, thinly sliced
09 - 2 cloves garlic, minced

11 - 1/2 tsp smoked paprika
12 - 1/4 tsp crushed red pepper flakes (optional)
13 - 2 tbsp fresh parsley, chopped

→ Finish

14 - Juice of 1/2 lemon

# How to Make It:

01 - Heat olive oil in a large skillet over medium-high heat until shimmering.
02 - Add seasoned turkey strips to the hot skillet. Cook for 4–5 minutes until lightly browned on all sides. Remove turkey and set aside on a plate.
03 - Add sliced onions and bell peppers to the same skillet. Cook for 6–8 minutes, stirring occasionally, until vegetables soften and develop slight caramelization.
04 - Stir in minced garlic, dried oregano, smoked paprika, and red pepper flakes if using. Cook for 1 minute until fragrant, being careful not to burn the garlic.
05 - Return the turkey to the skillet and toss to combine with the seasoned vegetables. Continue cooking for 4–5 minutes until the turkey is cooked through and flavors meld together.
06 - Drizzle fresh lemon juice over the mixture and sprinkle with chopped parsley. Taste and adjust salt and pepper if needed. Serve immediately while hot.

# Expert Tips:

01 -
  • It comes together in under 40 minutes but tastes like something that simmered all afternoon
  • The combination of sweet peppers and savory turkey creates this perfect balance that never gets boring
02 -
  • Dont crowd the pan when searing the turkey or it will steam instead of brown
  • The vegetables should still have a little bite, not turn into mush
03 -
  • Cut all your vegetables before you start cooking since everything happens fast once the heat is on
  • Let the skillet get properly hot between steps for the best texture and color
